Summary

This document presents the results of tests that were undertaken on packaged spherical fruits in openwork cardboard, in a ventilated tunnel, using various refrigeration methods. The air velocity and temperature parameters were examined, as well as the fruit layout. Real fruits were simulated using spherical plastic models filled with a 3% solution of K-carrageen gomme. The aim of this study was to obtain the fastest and most homogeneous cooling.
