A METHOD IS DESCRIBED WHEREBY THE SHELF LIFE OF REFRIGERATED RAW MILK CAN BE PREDICTED. DATA ARE SUPPLIED TO RELATE BACTERIAL COUNT TO THE ONSET OF DEGRADATION IN MILK PRODUCTS. THE PROBABILITY OF VARIOUS MICROBIAL GROWTH RATES OCCURRING AT 277, 279, 281 K (4, 6, 8 DEG C) IS USED TO PREDICT IF A SAMPLE OF RAW MILK COULD REACH A FINAL REJECTION COUNT OF 5,000,000 COLONY FORMING UNITS (CFU)/MILLILITRE PRIOR TO MANUFACTURE.
