Summary

THE AUTHORS GIVE AN EXPLANATION OF THE PRESSURE COOLING SYSTEM FOR FRUIT AND VEGETABLES. BASIC ITEMS AS REGARDS COOLING FRUIT AND VEGETABLES, ESPECIALLY THE LOCATION OF THE MASS AVERAGE TEMPERATURE OF AN APPLE, ARE ANALYSED BY THE FINITE ELEMENT METHOD. EQUIPMENT FOR ROOM COOLING, FORCED-AIR COOLING AND PRESSURE COOLING ARE DESCRIBED WITH DATA SHOWING THAT THE PRESSURE COOLING RATE IS THREE TIMES THAT OF FORCED-AIR COOLING. DATA ON RESISTANCE TO AIRFLOW FOR VARIOUS FRUIT AND VEGETABLES ARE SHOWN AND THE COOLING RATE FOR A PACKED BED OF APPLES ANALYSED BY THE FINITE ELEMENT METHOD IS GIVEN.
