Summary

CASTEL DEL RIO CHESTNUTS WERE SUBJECTED TO TREATMENTS WITH 30, 60 AND 80% CO2 AND, AT DIFFERENT TEMPERATURES, WITH WATER AND AIR AT 323-328 K (50-55 DEG C) AND WITH ATMOSPHERES WITH INCREASED NITROGEN LEVEL. AFTER 80-90 DAYS AT 273 K (0 DEG C) AND 85-90% RH THE BEST RESULTS WERE OBTAINED WITH 80% CO2 TREATMENTS OVER 10 DAYS AND WITH DIPPING OF FRUIT IN WATER AT 291-293 K (18-20 DEG C) DURING 8-10 DAYS. THIS TECHNIQUE, WIDELY USED IN EUROPE AT PRESENT, APPEARED EXPENSIVE. THE CO2 TREATMENT GAVE A PRODUCT WITH EXCELLENT QUALITY.
