Summary
THE VINIPAL AND GASQUET CONTINUOUS TREATMENT RESULTS IN A STABILISATION OF POTASSIUM BITARTRATE PRACTICALLY IDENTICAL TO THAT OBTAINED BY THE CONVENTIONAL LOW TEMPERATURE PROCESS, PROVIDED THE FOLLOWING CONDITIONS ARE MET: USE OF WINES PREFILTERED ON KIESELGUHR WITH LITTLE DILUTED ADDITIVES AND RECIRCULATION OF WINE AT THE BEGINNING OF THE TREATMENT. THE ADDITION OF A SMALL AMOUNT OF POTASSIUM BITARTRATE CRYSTALS (0.3 GRAM/HECTOL) IN THE CRYSTALLISER GIVES INTERESTING RESULTS. (Bibliogr. int. CDIUPA-CNRS, FR., 83-210-5881.
