DESCRIPTION, ILLUSTRATED BY DIAGRAMS, OF A < CONTACT > PROCESS DOUBLING THE THROUGHPUT OF WINE TARTARIC STABILISATION BY USING EXISTING EQUIPMENT -ULTRACOOLERS -WITHOUT CHANGE, EXCEPT FOR THE CONTROL OF THE EVAPORATION TEMPERATURE OF AMMONIA IN THE REFRIGERATING UNIT AT A LEVEL HIGHER THAN THE PRESENT LEVEL BY 5 K. THE OPERATING TIME OF THE REFRIGERATING UNIT CAN BE SLIGHTLY SHORTENED BY INCREASING THE SURFACE AREA OF THE PRECOOLING EXCHANGER, IN PARALLEL TO THE ADOPTION OF THE < CONTACT > PROCESS. THE DECREASE IN ENERGY COSTS SHOULD BE ESTIMATED BY THE FIRM CONSIDERING THE ADDITIONAL INVESTMENT COSTS INVOLVED (EXCHANGE SURFACE AREA, FLOW RATE AND INSULATION OF FILTERS AND SUPPLEMENTARY CIRCUITS), THE CONSTITUTION OF NIGHT ACCUMULATION COLD STORAGE THAT CAN BE USED DURING THE DAY SEEMS TO BE LESS ADVANTAGEOUS.
