THE TESTS CARRIED OUT WITH THE ALFA-LAVAL-CRYSTAL-FLOW SYSTEM FOR THE CONTINUOUS COLD TREATMENT OF WINES, IN ORDER TO CAUSE THEIR TARTRATE STABILISATION, SHOWED THAT THIS UNIT HAS A GOOD MECHANICAL AND THERMAL OPERATION AND LEADS TO A VERY MARKED DECREASE IN POTASSIUM BITARTRATE SOLUTION TRACES. THE WINES TREATED ARE COLD-STABLE AND SHOW NO PARASITIC SIDE DEVELOPMENTS. (Bull. OIV, FR., 56, N.633, 1983/11, 803, 17228.
