Summary

In this study, delicatessen meats were divided into 23 categories of ready-to-eat foods. Risk assessment for Listeria monocytogenes contamination and growth was investigated. The use of growth inhibitors such as lactate and diacetate was shown to be effective in reducing contamination, but the authors recommend combinations of control strategies.
