Summary

This article is about quick freezing of a new kind of gooseberry using different methods. 6 kinds of gooseberry were investigated: Smena, Kolobok, Sadko, Guido, Vinarus, Seyanetz Maurera. Quality criteria such as size and weight of berries, weight loss, capacity for retaining water and tasting appraisal were analysed and compared. Besides the chemical and technological characteristics of different kinds of gooseberry, the content of vitamin C, acidity, sugars, vitamin P and density of berries were considered. The best quality according to the correspondent indices among these kinds of gooseberry were exhibited by Sadko, Guido, Vinarius and Seyanetz Maurera.
