Summary
This document presents a particular type of air chiller exchanger used to rapidly freeze animal carcasses in freezing tunnels. This exchanger is divided into two parts and operates parallel to the air circuit. Both parts are supplied with refrigerant; while frost forms on one part, defrosting takes place on the other part (using circulated tunnel air). Thus, much of the humidity removed from the meat is returned to it, therefore reducing weight loss during this process.
