Summary

The feasibility of a CO2 evolution method using an infrared analyser to evaluate the shelf life of refrigerated (4 deg C) catfish was investigated. The increase in CO2 evolution rate for farm raised catfish stored from 0 to 10 days correlated highly with aerobic plate counts. The isoelectric focusing data also confirmed the aerobic plate counts and CO2 evolution rate results. Catfish spoilage was evident after 6 days at 4 deg C.
