Summary
This article provides an overview of a selection of papers presented at the International Congress of Refrigeration in the Commission C2, Food science and engineering. The authors have selected 16 out of the 45 papers included in the congress proceedings. They are grouped into 4 topics: innovative processes, fish refrigeration, strategies for energy saving and the cold chain. As modelling approaches were described in many papers, they are not part of a specific section.
