THE OBSERVATIONS ABOUT THE NITRITE CONTENT OF FRESH SPINACH INCREASING PROGRESSIVELY DURING A STORAGE TIME OF 28 DAYS AT COOLING TEMPERATURES ARE REPORTED. ON THE OTHER HAND, NO SIGNIFICANT INCREASE IN THIS CONTENT WAS OBSERVED DURING THE FROZEN STORAGE OF CANNED SPINACH OR OF SPINACH FOR BABY FOOD, BUT INCREASED CONCENTRATIONS WERE OBSERVED IN THESE WHEN THEY WERE MAINTAINED TOO LONG A TIME (39 HRS) THAWED AT THE AMBIENT TEMPERATURE G.
