Summary
Applying ion chromatography to analysis of spinach samples stored at -18 or 2-5 deg C with electrochemical detection. Freezing has no effect on nitrite contents. Nitrite concentrations increase during cold storage. These results indicate that one should not keep cooked spinach more than 2 days at 2-5 deg C.
