Summary

After inoculation, samples of lean meat and of adipose tissues, with or without nisin treatment, were packed under vacuum and incubated at 4 deg C for 4 weeks. Bacteria were counted after 0, 7, 14, 21 and 28 days. Nisin treatment combined with vacuum packaging inhibted the development of L. innocua and B. thermosphacta.
