Summary
Microbial and sensory qualities of a range of fresh and freshly processed fruits and vegetables weres stored in MVP (moderate vacuum packaging) at 4, 7, 12 or 20 deg C. The produce was packed in rigid, airtight plastic containers under 400 millibar atmospheric pressure. In MVP, the initial gas composition is that of normal air but at a reduced partial pressure. All of the pathogens lost viability quickly during the course of storage.
