A LOW INITIAL BACTERIAL COUNT ON THE MEAT SURFACE AFTER SLAUGHTER, A LOW RATE OF CONTAMINATION DURING HANDLING IN THE CUTTING ROOMS, DURING PROCESSING AND ON THE WAY TO THE CONSUMER ARE ESSENTIAL IF THE REQUIRED STANDARD OF QUALITY IS TO BE MAINTAINED. A VALUABLE HYGIENE MANAGEMENT IS NECESSARY FOR EACH FACTORY TO AVOID THE RISKS INHERENT IN PRODUCTION, TO ENSURE OPTIMUM PROFITS AND TO BE ABLE TO OFFER THE CONSUMER AN ATTRACTIVE END PRODUCT.
