Summary

In this seventh and final part (see also IIR Bulletin, references 97-3452, 98-2370, 98-2371, 98-3008, 99-1761, 99-1759), the author deals with the refrigerating and air conditioning units involved in the cheese-making process itself, in the ripening room (12 to 40 deg C) and cooling and freezing cells. He also gives the main features of the central refrigerating plant. Technical sheets with diagrams and tables give detailed characteristics of the rooms and their operating conditions.
