IN ORDER TO DETERMINE THE QUALITY LEVEL, 50 MEALS ON THE WHOLE SERVED IN TEN FIRMS WERE TESTED AND THE AUTHOR DETAILS THE RESULTS OF ANALYSIS OF THE WATER, PROTID, FAT, CARBOHYDRATE, CALCIUM AND IRON CONTENTS OF THE FOODSTUFFS. THE GOOD NUTRITIONAL QUALITY OF THE MEALS AND THE IMPROVEMENTS THAT COULD BE BROUGHT FOR ORGANOLEPTIC PROPERTIES ARE STRESSED. R.R.
