Summary

The factors influencing on the shelf life of the chilled poultry meat and the poultry meat products were characterized. The significant meaning of storage temperature stability was showed. Possibilities of improvement of wholesome safety of consumers of chilled poultry meat and poultry products by their disinfection, addition of substance slowing down the saprophytic bacteria's growth or the packing on modified atmosphere at optimum composition, i.e. adapted to individual proprieties of packed product were analysed. The most important principles of correct use of cooling transport were discussed.
