Summary
The aim of this study was to evaluate the effect of freezing conditions of storing vegetables to changes in their sensory properties. The research material, it is zucchini, green peas and leeks, stored in different conditions of freezing at constant temperatures -18°C and -25°C and at variable temperatures from -18°C to -25°C with a 48-hour cycle of change.
