Summary

THIS WORK STATES THE FUNDAMENTALS OF A NEW METHOD FOR THE DETERMINATION, IN REAL TIME, OF THERMAL CONDUCTIVITY AND SPECIFIC HEAT OF FOOD DURING FREEZING. THIS METHOD CONSISTS OF MEASURING THE TEMPERATURE AND THE HEAT FLOW IN A PHYSICAL MODEL. THE VALUES ARE THEN USED TO INDIRECTLY DETERMINE THE THERMAL PARAMETERS OF THE SAMPLES USING A NUMERICAL PROGRAM BASED ON THE ELECTRICAL ANALOGY THEORY.
