Small scale milk processing and preservation in developing countries: the case of Ethiopia; a review.

Summary
Energy and means of preservation is the main challenge in milk surplus rural areas of developing countries. Milk being perishable and the requirement being high to urban consumption, collection and transportation of this bulk from widely scattered rural sources requires well-defined methods of preservation, processing and distribution. Many researchers concluded that milk and other agricultural produce in remote areas loses their value due to the lack of proper storage and transit facilities. Small holder farmers being major contributors to total milk production, small scale milk collection, processing and preservation is highly relevant in developing countries and it is facing problems due to lack of access to modern energy, high equipment cost, high energy cost and environmental concerns in using conventional energy sources. As a means of solution to this problem, efficient, low cost, and effective small capacity processing and preservation plant with a capacity range of 100 to 1000 liters per day was successfully designed and implemented in some of sub-Sahara African countries. The very problem of this plant was the fact that it operates on electricity, which is not always available in remote rural areas. Chemical preservation to prolong fresh milk life before cooling is also successfully implemented by FAO so that farmers can bring their good quality milk to collection
and processing centers. In this paper, a review of small scale milk processing and preservation techniques in developing countries is performed. It was found that almost all rural societies in Ethiopia consume raw milk without any pasteurization and preservation mechanism which is unhygienic and cause of bacterial diseases. Introducing small scale milk pasteurizing and preservation mechanism using solar energy in rural parts of Ethiopia is recommended as solution to the problem mentioned here.
