Summary

The two main objectives of applying postharvest technology are to maintain quality (appearance, texture, flavor, nutritive value and safety) and to reduce losses between harvest and consumption. The authors study the following topics: harvesting and preparation for market; curing root, tuber and bulb crops; packinghouse operations; packaging materials and systems (modified-atmosphere packaging); insect and decay control; temperature and relative humidity control (room cooling, forced-air cooling, hydro-cooling, evaporative cooling, night-air ventilation, chilling injury, use of ice, alternative methods of cooling, increasing relative humidity); storage of horticultural crops (MA storage and CA storage); transportation of horticultural crops (refrigerated trailers); handling at destination; and processing of horticultural crops.
