Summary

The book addresses factors involved in maintaining the quality of plant products after harvest. The following points are studied in detail: preharvest factors on postharvest yield and quality; postharvest physiology; morphology and anatomy; harvesting, grading and packaging; chemical composition and nutritional quality; chemical and nutritional changes during ripening and storage; regulation of ripening and senescence; sensory and objective quality evaluation; postharvest physiological disorders; postharvest pathology; postharvest entomology; storage methods; transportation, distribution and marketing. In the chapter on storage methods, mechanical refrigeration and controlled and modified atmospheres are dealt with in particular, and in the chapter on transportation, refrigerated equipment and vehicles are examined.
