Summary

IN VIEW OF THE INCREASE IN EXPORTS OF FROZEN PRODUCTS FROM TAIWAN TO JAPAN (EEL, VEGETABLES, FRUIT AND PORK), THE AUTHOR SURVEYED THE HISTORIES AND THE TECHNICAL EVOLUTION OF THE FREEZING INDUSTRY IN TAIWAN. THE FREEZING INDUSTRY FOR DOMESTIC CONSUMPTION IS STILL SOMEWHAT MEDIOCRE IN CONTRAST TO EXPORT MARKETS. FUTURE DEVELOPMENTS ARE CONSIDERED AS REGARDS TECHNOLOGICAL CAPACITY, POTENTIALITY IN RAW MATERIAL PRODUCTION AND POSSIBLE EXTENSION OF OVERSEAS MARKETS. BRIEF REFERENCE IS MADE TO ACTIVITIES IN THE FREEZE-DRYING INDUSTRY AND THE NEED FOR POSTHARVEST TREATMENT SUCH AS PRECOOLING TROPICAL AGRICULTURAL PRODUCTS.
