Summary

A method to reduce the energy consumption of freeze-drying one kg of curds is described. Tests were carried out with the help of a freeze-drier in order to assess the ratio duration of freeze-drying/thickness of the curd layer. When in batch production, the optimization procedure gives the optimum load for the freeze-drier without additional testing. C.C.
