STORAGE TRIALS WERE CONDUCTED ON EIGHT 32-LAMB CARCASS CONSIGNMENTS, 3 FROM RIYADH ABATTOIR, 3 IMPORTED BY AIR AND 2 IMPORTED BY ROAD. THE COLD CHAINS INTO AND WITHIN SAUDI ARABIA WERE MONITORED BY MEANS OF MINIATURE ELECTRONIC TEMPERATURE LOGGERS PLACED INSIDE SELECTED CARCASSES. AIR TRANSPORTATION, POINT OF ENTRY INSPECTION AND STORAGE CHILLER OPERATION ARE WEAK LINKS IN THE COLD CHAIN. UNLESS CARCASS PACKAGING PREVENTS DESICCATION, SURFACE DRYING TERMINATES MICROFLORA DEVELOPMENT BEFORE MICROBIAL SPOILAGE IS DETECTABLE. DETERMINED BY VISUAL APPEARANCE A STORAGE LIFE AT 273 K (0 DEG C) MORE OR LESS 1 K, OF 14 AND 21 DAYS, MEASURED FROM THE DATE OF SLAUGHTER, CAN BE REASONABLY EXPECTED FOR UNWRAPPED AND STOCKINET WRAPPED CARCASSES, RESPECTIVELY.
