Recent development in meat refrigerated carriage.

Summary

Refrigerated carriage of hanging meat requires the use of isothermal boxes and some thermal devices specially designed to support exploitation restraints bound to control temperatures during carriage of this kind of foodstuffs in spite of the special usage restrictions in controlled-temperature. Different kinds of equipment of the insulated body are presented. They facilitate loading, unloading and stowing of carcasses, and also the distribution of the air cooled by the refrigerating unit. Different options are shown concerning the refrigeration units. It is shown from literature data how it is possible to appreciate the changes in weight and surface temperature of carcasses and thus to determine the right time to put a pre-cooled load in a vehicle in order to finish its cooling during carriage.
