Stochastic analysis of heat transfer in stored produce related to chilling injury hazards.

Summary
The influence of cold room temperature variations (in particular their frequency) on the surface and internal temperatures of pineapples and cucumbers, is reported. Cucumbers are more sensitive to these variations than pineapples. A simulation of the conditions is also described.
