Summary
Calcium chloride treatment is very effective in preventing softening of sliced kiwifruits, when it is accompanied by a controlled atmosphere (2% O2, 5% CO2) and a low temperature (about 1 deg C). If high levels of relative humidity (about 95%) and a ethylene scrubber are used in addition, it is possible to extend their shelf life from 3 days to about 10 days.
