THE PROBLEMS CONCERNING THE PRESERVABILITY OF GREEN BEANS FOR FRESH MARKET ARE REVIEWED AND DISCUSSED. SINCE GREEN BEAN IS A VERY PERISHABLE VEGETABLE DUE TO ITS HIGH RESPIRATORY METABOLISM, BUT SINCE IT IS PRONE TO CHILLING STRESS, IT MUST BE PRECOOLED TO 278 K (5 DEG C) BEFORE STORAGE AND OR SHIPMENT AT A RELATIVELY HIGH TEMPERATURE: 280 K (7 DEG C). THE PRINCIPAL PHYSIOLOGICAL AND MICROBIOLOGICAL DISEASES DEVELOPED DURING COLD STORAGE ARE REVIEWED. SOME SUGGESTIONS ARE GIVEN ON THE BEST STORAGE AND TRANSPORT CONDITIONS. A. P.
