Summary

PLANTAIN BANANA WHICH, WITH MACABO, IS THE BASIC FOOD IN THE CAMEROONS, RAISES, DUE TO ITS GREAT PERISHABILITY, SERIOUS STORAGE PROBLEMS. THE FRUIT BEGINS TURNING YELLOW FROM THE THIRD DAY AFTER PICKING, WHEN THEY ARE STORED AT 298-303 K (25-30 DEG C), WHEREAS FOR A TEMPERATURE RANGING BETWEEN 281 AND 283 K (8 AND 10 DEG C), THE STORAGE LIFE COULD BE EXTENDED BY 3 TO 21 DAYS WITHOUT APPRECIABLE DETERIORATIONS OF THE ORGANOLEPTIC PROPERTIES OF FRUIT.
