POSTHARVEST RESEARCH HAS BEEN TRADITIONALLY DIVIDED INTO (1) A STUDY OF THE PHYSIOLOGICAL PROCESSES IN EDIBLE PLANT TISSUE AFTER DETACHMENT (POSTHARVEST PHYSIOLOGY), AND (2) AN EMPIRICAL EVALUATION OF HANDLING AND STORAGE CONDITIONS ON QUALITY (SHELF-LIFE EVALUATION). THIS ARTICLE RELATES BASIC ADVANCES IN POSTHARVEST PHYSIOLOGY TO APPLIED PROCEDURES OF SHELF-LIFE EXTENSION, WITH PARTICULAR EMPHASIS ON RAW MATERIAL FOR PROCESSING. IT DESCRIBES THE NEED FOR A SYSTEMS APPROACH TO POSTHARVEST HANDLING AND A GREATER INTEGRATION OF POSTHARVEST PHYSIOLOGY WITH SHELF-LIFE-EVALUATION RESEARCH.
