The authors analyzed the stability of quality of cured poultry loin with the addition of nutritional fiber and roasted pork loin (grey, without the addition of nitrate) during cool storage. Samples were packed in modified atmosphere (MAP 30% CO2, 70% N2) or wrapped in stretch film (control samples K).
