Summary

During the growing season, a large and varied population of microorganisms responsible for postharvest wastage collects on the surfaces of vegetables. The efforts of the grower to produce high-quality crops may therefore be jeopardized by deterioration in storage before marketing. Optimal storage conditions have been identified and contribute greatly to minimizing postharvest losses; nevertheless, losses continue to occur. Various control strategies designed to prevent such losses are described.
