Summary

THE AUTHORS COMPARED THE CHEMICAL AND PHYSICAL CHANGES IN BREADED AND UNBREADED, AND PRECOOKED BREADED HAMBURGERS, OBTAINED WITH THE CONVENTIONAL AND THE NEW PROCESS. THEY OBSERVED THAT IN THE CASE OF THE NEW PROCESS (WITHOUT THAWING) THE STORAGE LIFE OF HAMBURGERS IS EXTENDED. IT IS THE SAME WITH BREADED PRODUCTS WITHOUT PRECOOKING, INDEPENDENTLY OF THE PROCESS USED.
