Effects of adding urokinase, with or without a bactericide, on growth of micro-organisms, pH, nitrogen content, proteolysis, plasmin activity and plasminogen, concentrations in kappa, bĂȘta, gamma and alpha caseins, and colloidal phosphorus and calcium contents. Role of microbial protease in milk proteolysis during storage at 4 deg C for 6 days. Activities of plasmin and plasminogen decrease during storage.
