Summary

EXPERIMENTAL RESULTS SHOW THAT THE STORAGE LIFE OF ICED FISH WAS APPROXIMATELY 25 DAYS, WHEREAS THAT OF THE FISH PARTIALLY FROZEN AT 270 AND 268 K (-3 AND -5 DEG C) WAS MORE THAN 35 ADN 45 DAYS, RESPECTIVELY, BASED ON THE EVALUATION OF TVB-N VALUE ANDHYGIENE STANDARDS FOR THE FRESHWATER FISH. COMPARED WITH THE ICED FISH, THE GROWTH OF BACTERIA IN THE FISH FROZEN AT 270 K WAS GREATLY INHIBITED.
