Summary

THE QUALITY OF FROZEN GREEN BEANS CAN BE IMPROVED ESPECIALLY BY FINDING SOME SUITABLE VARIETIES WHICH THEN ARE HARVESTED AT THE OPTIMUM LEVEL OF RIPENESS. THE VALIDITY OF THE FOLLOWING PARAMETERS: DISTRIBUTION OF SIZE, SEED/POD WEIGHT RATIO AND SEED LENGTH HAVE BEEN EXAMINED AS INDEX FOR EASY AND QUICK EVALUATION, SUITABLE FOR DEFINING THE MOST CONVENIENT MOMENT OF HARVESTING. THE OPTIMUM HARVEST TIME CAN ONLY BE DECIDED WITH SUFFICIENT PRECISION IF THE RESULTS OBTAINED FROM ALL THREE PARAMETERS ARE CONSIDERED.
