BESIDES FINDING THE MOST SUITABLE CULTIVAR FOR INDUSTRIAL TRANSFORMATION, THE AIM OF THE RESEARCH WAS TO DETERMINE SOME EVALUATION INDEXES, BOTH AGRONOMIC AND POSTHARVEST THAT COULD ENABLE ONE TO OBTAIN A TRANSFORMED PRODUCT WITH HIGH QUALITY CHARACTERISTICS. THE RIPENING LEVEL AT HARVEST IS THE MAIN FACTOR. AN EFFECTIVE METHOD TO EVALUATE THE OPTIMUM HARVESTING TIME IS THE PERCENTAGE SEEDS PODS WEIGHT RATIO WHICH SHOULD BE ABOUT 5-6% FOR THE SMALLEST SIZE AND SHOULD NOT EXCEED 10-12% FOR THE LARGEST SIZE.
