Summary

RESEARCH WAS CARRIED OUT ON BOTH SHORT AND LONG TERM PRESERVATION OF THE WHITE TRUFFLE (TUBER MAGNATUM PICO). AS REGARDS THE FORMER, THE MOST INTERESTING DATA ARE GIVEN BY THE DECREASE IN WEIGHT LOSS OF THE REFRIGERATED TUBERS ACHIEVED BY MEANS OF A SINGLE WRAPPING WITH SHRINKABLE MATERIAL, WHICH ALSO ALLOWS A MORE EFFECTIVE MARKETING OF THE PRODUCT. AS REGARDS THE LATTER, THE MOST PROMISING TECHNIQUES ARE FREEZING AND DRYING.
