Summary
The article presents a technological scheme of low-temperature drying of paste-like foods at atmospheric pressure, using a step-up thermal transformer with ammonia compressor and vertical tube air-cooler evaporator of a new design. It provides evaporation of ammonia with gravity running off a liquid film and accompanying movement of refrigerant vapour inside the tubes, as well as the gravity running off the film of condensing water steam along the external surface of vertical tubes. Recommended parameters of cold and warm air in drying of paste-like pectin containing foods for child nutrition are also presented.
