Type of article: Article

Summary

MYOFIBRILLAR MAGNESIUM ION-ATPASE ACTIVITY OF PLAICE AND RED SEA BREAM INCREASED WITH INCREASE IN REACTION TEMPERATURE AND CALCIUM ION CONCENTRATION. THE RESULTS STRONGLY SUGGEST THE ACCELERATION OF FISH RIGOR-MORTIS AT 273 K (0 DEG C) IS DUE TO THE INCREASE OF CALCIUM ION CONCENTRATION IN MYOFIBRILS DURING STORAGE AT THIS TEMPERATURE.
