Summary
TESTS TO ASCERTAIN THE INFLUENCE OF THE CRYOCONCENTRATION (20, 30 AND 40% OF THE JUICE CONTENT) OF STRAWBERRY JUICE. THE QUALITY OF THE JUICE REMAINED UNCHANGED AND INDICES OF COLOUR, AROMA AND NUTRITIVE VALUE WERE FULLY MAINTAINED. CRYOCONCENTRATION IS RECOMMENDED TO FOOD MANUFACTURERS.
