Summary

Developed in Japan in 1990, the high-pressure sterilization method (1,000 to 10,000 bars according to micro-organism resistance) should be used in Europe in a near future. This method maintains vitamin content and organoleptic properties, particularly for fruit juice. The equipment is described (20 tonnes of steel for a 500-liter tank) together with the different processes according to the type of packaging of treated food; the cost of treatment in industry is 30 centimes to 2 francs per litre. In France, three research programmes are currently being undertaken on the different aspects of this new sterilizing technology which could also be applied to high-quality products. Y.G.
