Summary
Assessment of high-pressure processing five years after the launching by ACB-GEC Alsthom of its first facility. In spite of a great amount of research, no industrial applications have yet been found, though manufacturers promise some within a year or two. High-pressure-treated foods (or food additives) are already marketed in Japan, mostly fruit-based products, including sauces, jellies, sorbets, jams, sugared fruit and juices, or products from fish, meat or milk. About ten companies could be involved in manufacturing aspects.
