Summary

Low O2 controlled-atmosphere storage resulted in accumulation of amino acids, but reduced production of fatty acids and aromatic compounds by apple fruits. Ethylene treatment of controlled-atmosphere stored fruits slightly increased the production of aromatic compounds, but reduced the amino acid content of apple fruits. Fruits stored at low temperatures had higher fatty acid contents than controlled-atmosphere stored fruits.
