Summary
The storage temperature and storage time of a product at the end of its distribution are essential factors in the cold chain. The importance of maintaining the correct storage temperature is recognized by the Codex Alimentarius and the European Union. Storage temperatures are laid down in the laws of many countries and hence they can vary. The important role of the producer in the determination of the storage temperatures and the storage time of the final product are discussed.
