Summary
The aim of this study is to evaluate the cold chain for chilled foods in France, hence, to obtain an overview of the successive temperatures chilled products are subjected to during the cold chain. The principle used to obtain such an overview is to continuously monitor the cold chain, from the shipping of the chilled products to domestic storage. The final objective is to detect, thanks to the results of this study, the possible weaknesses in order to improve the stages where these weaknesses are found.
